Tonight’s dish is a weeknight stew (of sorts). It’s a combo of things I love: pork tenderloin, tomatoes, olives, artichokes. It’s kinda a puttanesca but with pork, served over rice. It feels fancy but is easy to make. I’m into it. Reviews were good.
