Pork puttanesca stew with rice
Tonight’s dish is a weeknight stew (of sorts). It’s a combo of things I love: pork tenderloin, tomatoes, olives, artichokes. Plus it took less than an hour to make. It’s kinda a puttanesca but with pork, served over rice. It feels fancy but is easy to make. I’m into it. Reviews were good.

Husband: “Good flavours.”
Helen (6 years old): “Good. Everything goes together - meat goes with tomatoes, tomatoes go with rice. I like it. One more thing - when you add sundried tomatoes I don’t taste them. And even though it’s a little overcooked, I still like it. It’s easier to cut.”
Hector (3 1/2 years old): “Mama, I like the rice.”
What I used:
1 onion
3 garlic cloves
1 pork tenderloin
1 28oz can whole tomatoes
~1/4 cup kalamata olives
~1/4 cup castelvetrano olives
~1/4 cup artichokes
~1/4 cup sundried tomatoes
~1 tbsp capers
fish sauce (I would have used anchovies if I had had them)
1 cup basmati rice
olive oil
canola oil
salt
What I did:
Chopped onion and garlic in mini food processor.
Added to sauté pan (that has a lid) with lots of olive oil and a pinch of salt.
Cooked on medium heat until just starting to brown.
Added tomatoes.
Added olives, artichokes, sundried tomatoes, capers and fish sauce. Stirred to combine.
Added pork. I forgot to defrost this today so added it totally frozen 😳.
It didn’t fit! 😆 So used my trusty kitchen scissors and cut the end off. Added salt and pepper on the pork.
Popped the lid on. Turned heat down to medium-low. Set timer for 30 minutes.
Turned attention to the rice. Combined 1 cup rice, 2 cups water, a bit of canola oil and salt. Brought to a simmer. Put lid on. Set timer for 20 minutes.
After 30 minutes pork wasn’t quite at temperature - was at 128°F, wanted 135°F. Cooked for another 8 minutes. Done! (Actually, was overdone at this point).
Removed from pan, sliced, then returned to pan.
By now, rice was done. Served!
Next time:
The extra 8 minutes overcooked the pork. Nothing is worse than overcooked pork tenderloin. So next time, defrost the pork and cook for 15-20 minutes. Otherwise this was good. The pantry items add lots of flavour so I don’t feel like it was missing much.
