Root vegetable sheet pan
Had to Google what constitutes a root vegetable (because I didn’t want to list out all of the ingredients in the title of this post) and realized I forgot to add the carrots (that are downstairs) to the dish tonight. DAMN. I love roasted carrots. So caramel-y.
I was pretty happy with how this sheet pan turned out tonight until about two-minutes ago. Was meat-free (something I’m trying to do more of) and still hearty enough for a cold Monday night.
Tonight’s takes:
Husband: “It’s good. It’s missing tzatziki.”
Helen (6 years old): “It’s so-so. Like sort-of-good and sort-of-bad.”
Hector (3 1/2 years old): “It’s like the pizza we had last week.” What…? 🤦♀️
What I used:
1 huge sweet potato
1 small butternut squash
1/2 purple onion
1 parsnip
1 can chickpeas
~ 1 tsp cumin
~1/2 tsp chili powder
~1/2 tsp garlic powder
~1/2 tsp salt
lots of olive oil
~1 cup black (beluga) lentils
What I did:
Turned oven onto 400°F.
Peeled sweet potato and squash. Decided to only use 3/4 of the sweet potato.
Cut into bite-sized chunks. Removed seeds from the squash. Added veg to mixing bowl.
Cut half an onion into large pieces. Added to mixing bowl.
Realized I forgot the parsnip. Peeled and cut it up. Added to mixing bowl.
Added lots of oil to the bowl. Probably a good 1/4 cup. Opened can of chickpeas. Drained and added these as well.
Added spices (cumin, chili, garlic powder) and salt.
Mixed it all together.
Spread onto sheet pan. Made sure to scrape out as much of the oil+spices from the bowl as I could. Added another few pinches of salt all over veg. Put in the oven.
Turned attention to lentils. Added lentils + 2 cups of water to saucepan. Stuck over high-heat to bring to a boil.
Turned heat down so lentils were just simmering. Set timer for 20 minutes. Stirred a few times. Removed from heat when timer went off (and all the water was absorbed).
Threw lentils in mixing bowl to soak up leftover oil+spices.
Checked sheet pan. Veg needed more time. Roasted for 30-35 minutes total. Once tender, removed from the oven, added lentils over top. Done! I served it with a bit of feta on the side.
Next time:
Remember to add the carrots. And it definitely could have used a sauce. Tzatziki or this feta-tahini one would be 👌👌👌. Other than that, it was really good.
I’m never not going to love a sheet pan. Roasted anything is amazing. And it’s so damn easy to make - you literally can’t mess it up.
