This is one of my favourite dinners. Pork fat is just so damn tasty. And I love tubed meat (hot dogs, sausages… yup, all of it). And then roasted beans and tomatoes, also delicious. It’s really just so good.
Tonight’s takes:
Husband: “I would have appreciated a bit more Maillard reaction 😉 It’s delicious.”
Helen: “It’s rich. I still really like it. I think it’s good. Rich and good. I love it.”
Hector: “Pretty good. Did you check the temperature of the beans? You forgot to check the temperature. The tomatoes are a little bit spongy. But they are really good. [SLURP SLURP SLURPPPPPPP]”
What I used:
4 sausages
1 can cannellini beans
10 small tomatoes
1 large bag of spinach
lots of olive oil
salt
What I did:
Turned oven onto 375°F. Got ingredients out: sausage, beans, tomatoes.
Put a lot of oil in roasting dish.
Added sausage, beans, tomatoes. Rolled them around in the oil. Added a few big pinches of salt. Put in oven for 25 minutes.
Wilted spinach in a fry pan on medium heat. Added olive oil and salt to spinach.
It wouldn’t all fit, so as it wilted I continued to add more leaves.
After 25 minutes, pulled sausage, beans and tomatoes out of the oven. Checked sausage internal temperate to make sure they were done (160°F).
Added spinach to the pan.
Done!
Served with feta and bread.
Next time:
MAKE IT EXACTLY LIKE THIS. I’d buy these sausages again - they were really rich and delicious. I could really taste the leeks. And I’d use cherry tomatoes if I had those instead of the vine ripened ones.
