It’s fall. Back to weeknight meals. I had to turn the heat back on in my house. Summer left in a blink. I’m trying to hold on to summer by wearing shorts still - freezing my butt off though. Seems I’m not cut out to be a shorts and socks/sandal wearer.
Kicking this thing off with an easy dinner tonight.

Husband: “Whoa, the potatoes are awesome (for once). Chicken is cooked well. Overall good.”
Helen: “I think it was really good, but the chicken could have used more seasoning.”
Hector: “This is medium.” He aggressively hovered his thumb between thumbs up and thumbs down while making this declaration.
What I used:
8 yellow potatoes
3 chicken breasts
5 handfuls arugula
half a lemon
10 sage leaves
dried oregano
granulated garlic
olive oil
salt & pepper
What I did:
Turned oven on to 450°F. Washed and cut potatoes into small pieces. About 16 pieces per potato.
Dressed the potatoes with lots of olive oil (more than you think you need), lots of salt (also more than you think you need), pepper, a good tablespoon of oregano and a heaping teaspoon of granulated garlic.
Tossed everything together.
Divided the potatoes between two sheets pans. I wanted the potatoes to crisp up so I didn’t want them crowded on one. (Missed a photo of this - a bit rusty over here.)
Added the chicken breasts to the same mixing bowl. Added more olive oil and salt. Tossed the chicken well to get all the leftover herbs and spices from the bowl.
Nestled the chicken breasts amongst the potatoes. Channeled my best food blogger skills and strategically placed the sage.
Roasted at 450°F for 45 mins. Forgot to toss half-way, but they still turned out great.
Added a few handfuls of arugula on top of each sheet pan. Added a pinch of salt and then squeezed the lemon juice over the greens.
Served, making sure to swish the greens over the pan to pick up the extra olive oil. (Also forgot a picture of this… it looked great!)
Next time:
It was simple and delicious. Who doesn’t love roasted potatoes? The arugula was bright and fresh. Overall, easy and satisfying. Perfect for getting back at it after so many luxurious long summer nights.
